This season’s Solaceiro comes from Bioma Café, a new producer in our lineup and one of the most respected farms in Brazil’s Cerrado Mineiro region. Located on a plateau at around 1,200 meters, Bioma Café benefits from defined seasons, stable climate, and ideal growing conditions that allow cherries to mature slowly and evenly. This steady development creates a cup with natural sweetness, clarity, and a well‑structured profile—qualities that align beautifully with Solaceiro’s identity.
Bioma Café is the result of a long‑term vision shared by Marcelo Assis and Flávio Márcio Ferreira, who began collaborating in the early 2000s. With strong agricultural and technical backgrounds, they spent nearly a decade researching terroir before founding the farm in 2010. Their goal was clear: build a professional specialty coffee operation from the ground up, where quality is the product of planning, agronomy, and disciplined execution. Today, Bioma Café is one of the most awarded farms in the Cup of Excellence Brazil, recognized for its focus on experimentation, controlled processing, and environmental responsibility.
This lot is a natural‑process coffee, dried slowly to preserve sweetness and texture while maintaining clarity. The result is a balanced, velvety cup with notes of plum jam, cocoa, chocolate, honey, panela, and anise. Its medium roast highlights the coffee’s inherent structure and versatility, performing beautifully across espresso, pourover, French press, and drip.
As Solaceiro continues to evolve season by season, this year’s Brazil coffee brings a new expression of comfort and vitality—rooted in Bioma Café’s disciplined craft and Cerrado Mineiro’s expressive terroir.
