Carousel reflects something deeply important to us: the joy of introducing new and exciting coffees to Northern Ontario. As a small roastery, we’re driven by curiosity—by the producers who inspire us, the origins we haven’t yet explored, and the standout lots that deserve to be shared with our community. This series gives us the freedom to bring in coffees that spark our interest, whether it’s a unique processing method, an unexpected flavour profile, or a country we’ve never featured before. Each release is a chance to broaden what specialty coffee can look like here at home, and to celebrate the exceptional work happening across the global coffee landscape.
Carousel is our way of saying: come taste something new with us. It’s a rotating invitation to explore, learn, and enjoy coffees that might otherwise never reach our corner of the world—coffees that are delicious, expressive, and crafted by producers whose dedication deserves to be recognized.
Origin & Terroir
This honey‑processed lot is grown in the Los Santos region, between 1,200 and 1,900 masl, where volcanic soils, cool mountain air, and a well‑defined dry season create ideal conditions for slow cherry development. These environmental factors contribute to the sweetness, structure, and clarity that Tarrazú coffees are known for.
The honey process—where mucilage is left on the parchment during drying—adds depth and texture while maintaining a clean, balanced profile. Expect a cup that is sweet, lively, and beautifully structured, with notes of honey, cocoa, brown sugar, and citrus.
About Coope Tarrazú
Founded over six decades ago, Coope Tarrazú represents thousands of smallholder farmers across the highlands of Tarrazú. Their centralized processing, strict quality protocols, and clearly defined standards allow them to produce coffees that remain reliable and traceable—even when working with hundreds of contributing farms.
The cooperative invests heavily in producer training, infrastructure upgrades, and processing innovation, including experimentation with fermentation techniques such as anaerobic methods. This commitment to consistency and evolution has positioned Coope Tarrazú as a benchmark not only within Costa Rica but globally.
Cup Experience
This lot offers a medium‑full body, bright acidity, and a sweet, lingering finish. The honey process enhances texture and depth while keeping the cup clean and balanced. It shines as a light–medium roast, ideal for filter brewing, Aeropress, and cold brew.
A Limited Release
As the inaugural coffee in our Carousel Rotating Series, this Tarrazú honey represents what the series is all about: seasonal coffees chosen for their uniqueness, craftsmanship, and sense of place. Once this lot is gone, the Carousel turns—bringing something new, different, and equally compelling.
