Zephyr is a decaf that refuses to compromise — a gentle, flavour-forward coffee that proves removing caffeine doesn’t mean losing character. Sourced from smallholder farmers across the Caldas region of Colombia, this lot undergoes a sugarcane (EA) decaffeination process, a naturally derived method widely used in Colombia that removes caffeine while preserving the coffee’s intrinsic sweetness and structure.
Grown at 1,750 metres above sea level, where varied altitudes and microclimates contribute to a well-rounded cup, this blend of Caturra and Castillo varietals delivers far more than you’d expect from a decaf. We roast it to a medium profile that highlights the cocoa and molasses notes while keeping the cup bright, clean, and layered — avoiding the hollow flatness that gives decaf a bad name. The result is a cup with rich cocoa depth, dark molasses sweetness, and a delicate blackcurrant brightness that keeps every sip interesting. The body is round and creamy with a clean, sweet finish.
