
Spring has finally arrived, and with it comes a lot of exciting news from our little coffee operation. Our last update was back in December, and so much has happened since then—new markets, new coffees, new equipment, and a whole lot of growth. Here’s what we’ve been up to.
North Bay Farmers’ Market — All Winter Long, and Now All Summer Too
Since February, we’ve been vending at the North Bay Farmers’ Market every Saturday, serving hot drinks and offering our freshly roasted beans. It’s been an incredible way to meet new customers, connect with the community, and share what we’ve been working on.
We’re happy to share that we’ll be continuing at the market throughout the spring and summer season (excluding a few dates when we’ll be popping up at other events (April 25 – Maple Syrup Festival; June 27 – Callander FunFest; August 28-30 – Verner Ram Rodeo). By the May long weekend, the market will move outdoors to its usual location at the North Bay Museum.
Zephyr Decaf — A New Chapter for Our Decaf Lovers
Earlier this year, we released our first decaf, Zephyr, and it was met with so much enthusiasm. The original lot was a smooth, comforting Colombian decaf with notes of molasses, marshmallow, and cocoa.
We’ve since sourced a new but similar decaf—still Colombian, still EA‑processed, but with a slightly more layered profile. Expect familiar richness with added depth: cocoa, blackcurrant, molasses. It’s balanced, versatile, and delicious both as filter and espresso. If you loved the first Zephyr, this new iteration will feel like a natural evolution.
Totality — Now Featuring New Beans
Our medium dark roast, Totality, has also received a quiet refresh. We’ve updated the beans to improve sweetness and structure while keeping the profile true to what people love: bold, smooth, and full‑bodied without harshness. The new blend brings a touch more complexity and a cleaner finish—small changes that make a big difference in the cup.
The new lot comes from the Palestina municipality in Huila, Colombia, grown by members of the CADEFIHUILA Cooperative, an organization with more than 60 years of experience supporting producers across the region. These beans are cultivated at around 1,700 masl, under shade and native trees, and processed using a traditional washed method with a 12‑hour fermentation and double rinse. The result is a clean, expressive coffee with deep caramel and brown sugar sweetness, a smooth almond undertone, and a warm chocolate finish lifted by bright citric acidity.
Refined Tasting Notes Across the Lineup
With new beans arriving, we took the opportunity to run a full product line tasting session this spring. It allowed us to revisit each coffee with fresh eyes (and fresh palates) and refine our tasting notes to better reflect what we’re experiencing in the cup.
These updates aren’t dramatic—just more accurate, more intentional descriptions that help you choose the coffee that fits your taste.
Our Full‑Service Mobile Espresso Bar Is Ready to Roll
One of the biggest milestones this season: our full‑service mobile espresso bar is officially up and running.
We’ve outfitted it with our beautiful La Spaziale Vivaldi II espresso machine, and we’re thrilled to debut the full café experience at this Saturday’s Powassan Maple Syrup Festival. Espresso, Americanos, lattes, tea lattes, hot chocolate—the works. This setup has been a long time coming, and we can’t wait to bring it to more events throughout the year.
A New Guatemala Release Is Coming Soon
We’ve been quietly working on a new single‑origin release from Guatemala, and it’s quickly become an in‑house favourite. We’re keeping the full details under wraps for now, but here’s a little preview of what to expect:
Milk chocolate. Brown sugar. Vanilla.
Warm, sweet, and incredibly drinkable.
