Spring Update: New Beans, New Gear, and a Full Season Ahead

Spring has finally arrived, and with it comes a lot of exciting news from our little coffee operation. Our last update was back in December, and so much has happened since then—new markets, new coffees, new equipment, and a whole lot of growth. Here’s what we’ve been up to.

North Bay Farmers’ Market — All Winter Long, and Now All Summer Too

Since February, we’ve been vending at the North Bay Farmers’ Market every Saturday, serving hot drinks and offering our freshly roasted beans. It’s been an incredible way to meet new customers, connect with the community, and share what we’ve been working on.

We’re happy to share that we’ll be continuing at the market throughout the spring and summer season (excluding a few dates when we’ll be popping up at other events (April 25 – Maple Syrup Festival; June 27 – Callander FunFest; August 28-30 – Verner Ram Rodeo). By the May long weekend, the market will move outdoors to its usual location at the North Bay Museum.

Zephyr Decaf — A New Chapter for Our Decaf Lovers

Earlier this year, we released our first decaf, Zephyr, and it was met with so much enthusiasm. The original lot was a smooth, comforting Colombian decaf with notes of molasses, marshmallow, and cocoa.

We’ve since sourced a new but similar decaf—still Colombian, still EA‑processed, but with a slightly more layered profile. Expect familiar richness with added depth: cocoa, blackcurrant, molasses. It’s balanced, versatile, and delicious both as filter and espresso. If you loved the first Zephyr, this new iteration will feel like a natural evolution.

Totality — Now Featuring New Beans

Our medium dark roast, Totality, has also received a quiet refresh. We’ve updated the beans to improve sweetness and structure while keeping the profile true to what people love: bold, smooth, and full‑bodied without harshness. The new blend brings a touch more complexity and a cleaner finish—small changes that make a big difference in the cup.

The new lot comes from the Palestina municipality in Huila, Colombia, grown by members of the CADEFIHUILA Cooperative, an organization with more than 60 years of experience supporting producers across the region. These beans are cultivated at around 1,700 masl, under shade and native trees, and processed using a traditional washed method with a 12‑hour fermentation and double rinse. The result is a clean, expressive coffee with deep caramel and brown sugar sweetness, a smooth almond undertone, and a warm chocolate finish lifted by bright citric acidity.

Refined Tasting Notes Across the Lineup

With new beans arriving, we took the opportunity to run a full product line tasting session this spring. It allowed us to revisit each coffee with fresh eyes (and fresh palates) and refine our tasting notes to better reflect what we’re experiencing in the cup.

These updates aren’t dramatic—just more accurate, more intentional descriptions that help you choose the coffee that fits your taste.

Our Full‑Service Mobile Espresso Bar Is Ready to Roll

One of the biggest milestones this season: our full‑service mobile espresso bar is officially up and running.

We’ve outfitted it with our beautiful La Spaziale Vivaldi II espresso machine, and we’re thrilled to debut the full café experience at this Saturday’s Powassan Maple Syrup Festival. Espresso, Americanos, lattes, tea lattes, hot chocolate—the works. This setup has been a long time coming, and we can’t wait to bring it to more events throughout the year.

A New Guatemala Release Is Coming Soon

We’ve been quietly working on a new single‑origin release from Guatemala, and it’s quickly become an in‑house favourite. We’re keeping the full details under wraps for now, but here’s a little preview of what to expect:

Milk chocolate. Brown sugar. Vanilla.
Warm, sweet, and incredibly drinkable.

We’ve added a new Retail Partners page to our website so you can easily find our beans in stores near you. You can currently pick up our coffee at:

December Update: Brewing Excitement


Thanks so much for following along on our startup journey! We had hoped to be busy roasting coffee beans by now so we could share our first batches with you for the holidays. While we’ve run into some delays and are still eagerly awaiting the arrival of our roaster, rest assured we’ve been hard at work behind the scenes getting everything ready for launch. In the meantime, we’re excited to give you a sneak peek at some of the roast profiles we’ve been planning. Our staple offerings will feature beans from Brazil, Colombia, and Guatemala, each bringing their own unique character to the cup. We’re also crafting signature blends that highlight our favorite flavor notes from these regions — think Brazil x Colombia and Brazil x Guatemala combinations.

We’ll be offering a range of roasts to suit every palate:

  • Light roasts for bright, nuanced flavors
  • Medium roasts for balance and smoothness
  • A medium-dark roast for those who love a bolder cup
  • And a medium roast decaf option, perfect for coffee lovers who prefer to skip the caffeine

Our roaster could arrive any day now, and when it does, we’ll be raring to get roasting. We can’t wait to share these coffees with you soon — just in time to warm up the winter season ✨

Startup Update: Coffee Roaster Incoming!

Hey friends,

Just popping in with a quick update from our little coffee corner of the world. Things are moving, and we’re pretty stoked with how it’s coming together.

First off, our coffee roaster is officially in the works! It’s being manufactured as we speak and should land in our hands by the end of September. We’ve been dreaming about this moment for a while, and it’s surreal to see it coming together.

In the meantime, we’ve been running some test roasts to dial in our profiles and get a feel for the beans. It’s been a mix of science, intuition, and a whole lot of caffeine—but we’re loving every second. Can’t wait to see what magic we can pull out of the new coffee roaster once it’s here.

Our roasting space is getting a little facelift too! Some small renovations to make it feel more like home (and less like a garage with dreams). It’s coming together slowly but surely.

Also—our coffee bags arrived! And they look so good. Shoutout to Pouchmakers for absolutely crushing it. Seeing our branding on those bags for the first time was a moment. We may or may not have pulled a celebratory shot (espresso, of course) to mark the occasion.
