Yaxkin is a coffee that embodies renewal and brightness, much like the rising of a new sun. Sourced from Huehuetenango, one of Guatemala’s most celebrated coffee regions, this medium-light roast showcases the clarity and vibrancy that high-altitude cultivation brings. At 2,000 meters above sea level, cherries mature slowly, developing rich sugars and nuanced acidity that translate into a cup alive with dried citrus, molasses, and plum.
Behind Yaxkin is ASPECAHUE, a network of 218 smallholder farmers across Huehuetenango’s renowned municipalities, including Unión Cantinil, Santiago Petatán, Todos Santos Cuchumatán, San Antonio Huista, San Pedro Necta, and Santiago Chimaltenango. Their diverse elevations allow for staggered harvests from December to May, ensuring each cherry is picked at peak ripeness. Traditional Guatemalan varietals such as Caturra, Pache, Bourbon, and Criollo thrive here, chosen for their resilience and cup quality in the region’s unique microclimates.
Processing follows the washed method, enhancing clarity and preserving the integrity of each lot’s flavour profile. Cherries are handpicked, pulped with mechanical disc pulpers, fermented under controlled conditions, and washed clean. Drying takes place slowly on patios or nylon-covered beds, ensuring consistency and longevity. Traceability is embedded at every stage, with details recorded from producer to harvest date, guaranteeing transparency and quality assurance. With 80% of members certified organic by MAYACERT and the remainder in transition, ASPECAHUE sets a standard for responsible, regenerative coffee production.
Yaxkin’s medium-light roast was chosen to highlight the inherent brightness and complexity of Huehuetenango beans without overshadowing their delicate character. Whether brewed as a pourover, drip, or even a gentle French press, Yaxkin delivers a cup that is both refreshing and layered—a coffee that invites you to savour the warmth and clarity of a new sun.
