Description
Totality is a coffee that embraces the rare beauty of balance, much like the fleeting moment of a total eclipse when light and shadow align in perfect harmony. Sourced from the Palestina municipality in Huila, Colombia, this lot is grown at around 1,700 metres above sea level under shade and native trees by members of the CADEFIHUILA Cooperative — an organization with six decades of experience supporting producers across 27 municipalities in Huila. The cherries are traditionally washed, fermented for 12 hours, and double-rinsed before drying, resulting in a clean, expressive cup. We chose a medium-dark roast profile to offer a deeper, more robust coffee while carefully preserving the inherent character of the bean — avoiding the loss of nuance that can come with roasting too dark. The result is a cup with rich caramel sauce sweetness, a bright pop of passion fruit acidity, smooth almond undertones, and a bold dark chocolate finish that lingers. Versatile and rewarding, Totality is equally at home as a rich espresso or French press, yet remains beautifully balanced in drip brewers and pourovers. It is a coffee designed to be savoured — inviting you to pause and enjoy the moment when boldness and brightness meet.
